I love soup! Soup and salad is one of my favorite meals. Everytime we go out to eat, I'm always excited to try the soup of the day. Life's all about the little things, right?? Although I like almost all soups, tomato basil is my all time favorite. It's a classic soup that never dissapoints. Tomato Basil is delicous year round, and thankfully it is easy to make too! 1 tablespoon olive oil
1 small finely chopped onion
2 mined garlic cloves or 2 teaspoons garlic powder
3 cans crushed tomatoes(15oz) or 2 lbs fresh boiled tomatoes
2 1/2 cups vegetable broth or stock
1 tablespoon nutrional yeast (optional)
1 can coconut cream
2 - 2 1/2 tablespoons brown sugar
1/4 cup fresh chopped basil or 4 tablespoons dried basil
*salt and pepper to taste
1. In a large pot, add olive oil, garlic, and onions and cook over medium heat. Saute until tender and slightly caramelized.
2. Slowly add tomatoes, broth, basil, salt, pepper, and broth on a low simmer. 15-20 minutes.
3. Remove from heat and puree the soup. You may use a traditional blender, or an immersion blender. If you prefer a hearty soup, then no blending will be required. I like to blend 3/4 of my soup, and add the remaining 1/4 that is still hearty.
4. Slowly add the coconut cream, and lightly blend. Check to see if you will need more salt or pepper to taste.
This soup is delicious on it's own, but it pairs well with salad and grilled cheese sandwhiches.
Try adding fresh croutons or your favorite herb for garnish.
